The SAU is divided into six Conferences and one Field that oversee the specific work of churches, schools and other entities within their regions. These are:
1. Cape Conference (CC)
2. Kwa-Zulu Natal Free State Conference (KNFC)
3. Lesotho Conference (LC)
4. Namibia Field (NBF)
5. Swaziland Conference (SC)
6. Trans-Orange Conference (TOC)
7. Transvaal Conference (TC)
The SAU also ministers to the needs of the people in its territory through its institutions, namely:

Voice of Prophecy (VOP)
Adventist Development and Relief Agency (ADRA-SA)
